Recipe: Southern Bisquits

Cat Head Biscuits

3 ½ c. self rising flour
¼ c. oil
1 ¼ c. buttermilk
¼ c. melted butter
Pinch salt

Preheat oven 500 degrees.

Using a mixing bowl add flour then milk pour oil over milk. Take a table spoon and mix until well incorporated forming a ball. Pour dough onto a flat floured surface using paraffin paper light sprinkled with flour. Now sprinkle flour lightly over dough. Take hands and press out to 1 in. in thickness. Take a large biscuit cutter and cut out biscuits. Use excess dough by re forming into a ball and press out again cutting till all is used. Place onto a lightly greased baking sheet. Bake until light brown. When removed brush tops with melted butter and sprinkle with a dab of salt. Serve hot. Enjoy.

Recipe: Peanutbutter Sheet Cake

Peanut Butter Sheet Cake

Ingredients
2 cups Sugar
1 teaspoon Baking Soda
2 cups Flour
1 teaspoon Salt
2 sticks Butter
1 cup Water
1 cup Peanut Butter
½ cups Milk
1 teaspoon Vanilla
2 whole Eggs
1 stick Butter
½ cups Peanut Butter
6 teaspoons Milk
1 pound Powdered Sugar

Preparation Instructions
In a large bowl, mix together sugar, baking soda, flour and salt. Set aside.
Combine butter, water and peanut butter in saucepan and bring to boil. Pour over flour mixture.
Add milk, vanilla and eggs. Mix.
Pour in large cookie sheet or jelly roll pan. Bake at 400F degrees for 20 minutes.
Frosting:
Bring butter, peanut butter and milk to boil in saucepan. Add one pound of powdered sugar. Pour warmed frosting over cooled cake.

Recipe: Peanut Bread

Sweet Peanut Butter Bread
Prep Time: 20 minutes
Cook Time: 50 minutes
1 hour, 10 minutes
Yield: 1 loaf
Sweet, fluffy peanut butter bread!

Ingredients

2 cups all purpose flour
1 tablespoon baking powder
½ teaspoon salt
¼ cup salted butter, room temperature
½ cup sugar
¼ cup packed brown sugar
1 cup creamy peanut butter
1 egg
1 teaspoon vanilla extract
1 cup milk
Instructions

Preheat oven to 350° F. Grease a standard-sized loaf pan and set it aside.
In a small bowl whisk the flour, baking powder, and salt together.
In a separate large mixing bowl beat butter and sugars on low speed 2 minutes, Beat in peanut butter then egg and vanilla, scraping down sides of bowl.
Add flour mixture and beat on low until combined, the batter will be very thick and crumbly. Pour in milk and beat on low until batter is smooth.
Add batter to loaf pan and evenly spread it out. Bake for 50 minutes or until the center springs back when pressed with a fingertip.
Cool in pan on wire rack 15 minutes, remove from pan and cool completely.

Recipe: Fudge Brownie Pie

Fudge Brownie Pie

3/4 cup flour 
1 cup of regular sugar
1/4 cup unsweetened cocoa powder, sifted
1 teaspoon baking powder
1/4 tsp salt
4 ounces butter, melted
2 large free range eggs, beaten
2 teaspoons vanilla
1/2 cup chopped toasted pecans
2 handfuls of mini marshmallows

For the frosting:

2 ounces butter, melted (1/4 cup)
1 ounce cocoa powder, sifted (1/4 cup)
2 ounces evaporated milk (1/4 cup)
1 cup powdered sugar, sifted (8 ounces)

Preheat the oven to 350 degrees. Butter a 9 inch spring form pan set aside.

Whisk together the flour, sugar, cocoa powder, baking powder and salt in a bowl. Beat together the butter, eggs and vanilla. Add to the dry ingredients and mix until smooth. Stir in the toasted nuts. Pour into the prepared pan.

Bake on a middle shelf of the oven for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Immediately sprinkle the marshmallows on top and return to the oven for a few minutes to melt the marshmallows. Remove from the oven and carefully spread the chocolate frosting over top.

To make the chocolate frosting mix all ingredients together in a bowl, beating with an electric whisk until smooth and thick. Spread on the hot marshmallows. Let cool completely. Cut into wedges to serve.

Recipe: Double Chocolate Coca Cola Cake

 can still remember my Mom pouring out a bottle of Coke to make this cake. It was our favorite. This cake is so moist and the icing is just irresistible. I hope you get a chance to make this one.

Double Chocolate Coca Cola Cake

1 cup Coca Cola (real thing, not diet)
1/2 cup oil
1 stick butter
3 Tablespoon cocoa
2 cups sugar
2 cups flour
1/2 teaspoon salt
2 eggs
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla

Frosting:

1 stick butter
3 Tablespoon cocoa
6 Tablesppon of cream or milk
1 teaspoon vanilla extract
3 3/4 cups confectioner's sugar

In a saucepan, mix Coca Cola, oil, butter and cocoa and bring to a boil. In another bowl, combine the sugar, flour and salt. Pour the boiling Cola mixture over the flour mixture and beat well. Add the eggs, buttermilk, soda and vanilla and beat well. Pour mixture into a greased and floured 13 x 9 inch baking pan and bake at 350 degrees or 20 to 25 minutes. Remove pan. Cool for about 10 minutes before frosting.

Frosting: In a saucepan, combine the butter, cocoa, and milk. Heat until the butter melts. Beat in the remaining ingredients and spread on the cake while it's still warm. Enjoy!

Recipe: Ice Cream Cake

Ingredients:

2 cups of your favorite ice cream, softened ( not frozen yogurt or light ice cream)
1 and 1/2 cups of self rising flour

Directions:

Preheat your oven to 350 degrees. Grease and flour an 8×4 inch loaf pan.

Mix the ice cream and flour together in a bowl just until combined. Smooth it out so it looks even. Bake for 45 minutes or until toothpick inserted comes out clean.

*you can add things such as candy bits, raisins, nuts, etc. Use your imagination

Recipe: Ooey Gooey Chocolate Cake


Ooey Gooey Chocolate Insanity Cake

For the cake
2 cups sugar
2 cups flour, plus 1 tablespoon divided
1 teaspoon baking powder
2 teaspoon baking soda, divided
1/2 pound unsalted butter
1/4 cup sweetened cocoa powder (I used Ghirardelli ground chocolate)
1 cup water
2 eggs
1/2 teaspoon kosher salt
1/2 cup milk
1/2 tablespoon vinegar
1 teaspoon vanilla extract

1 1/2 cups semi sweet chocolate chips

Preheat oven to 375 degrees.  Prepare a 9x12 cake pan by buttering and flouring.  Set aside.

In a small cup add 1/2 cup milk and 1/2 tablespoon vinegar.  Set aside.

In a medium sized bowl combine 2 cups flour, sugar, 1 teaspoon baking soda, and baking powder, stir with a whisk to combine.  Set aside.

In a small saucepan combine butter, cocoa and water.  Bring to a boil, then add to flour mixture.  Beat well.
  
Add 1 teaspoon of baking soda to milk mixture.  Set aside.  In a small bowl combine chocolate chips and 1 tablespoon of flour.  Set aside.

Add eggs to flour butter mixture.  Then add milk mixture and vanilla.  Beat well to combine.  Add chocolate chips to mixture and fold in.

Pour into prepared cake pan.  Bake for 20 minutes or until a toothpick comes out of the center clean.

5 minutes before cake is done, prepare icing.

For icing
1/4 cup sweetened cocoa powder (I used Ghirardelli ground chocolate)
1/4 pound unsalted butter 
6 tablespoons milk
1 pound powdered sugar
1 teaspoon vanilla extract
1/4 teaspoon salt 

Bring cocoa, butter and milk to a boil in a large saucepan.  Remove from heat and add powdered sugar, salt and vanilla, beat well with mixer.  Spread over hot cake.  Serve!

Recipe: Corn Nuggets

Corn Nuggets

Ingredients:

1 (11 ounce) can creamed corn
1 (11 ounce) can whole kernel corn, drained
1/2 cup yellow cornmeal
1/2 cup all-purpose flour
1 egg white
2 tablespoons milk
salt and pepper to taste
3 cups vegetable oil for deep frying

Directions

In a medium bowl, stir together the creamed corn and drained whole kernel corn. Line a baking sheet with aluminum foil, and coat with vegetable oil or cooking spray. Drop spoonfuls of the corn mixture onto the sheet, and freeze until firm, about 3 hours.

Heat one inch of oil to 350 degrees F (175 degrees C) in a large deep skillet, or fill a deep-fryer with oil as directed by the manufacturer.

Mix together the cornmeal, flour, egg white, milk, salt and pepper in a medium bowl. Dip frozen corn nuggets in the batter, and quickly fry in hot oil until golden brown. Remove to paper towels to drain.

Recipe: Heaven in a Crockpot

Heaven in a Crockpot

1 box Betty Crocker fudge brownie mix
1/2 cup butter, melted. 
4 eggs
1 pouch Betty Crocker chocolate chip cookie mix
Mix it all together.
Cook about 3 hours on low.
Top with vanilla ice cream.

Recipe: Vodka Slushies

VODKA SLUSHIES

1 1/2 quarts cranberry juice cocktail
1 (6-ounce) can frozen orange juice concentrate, defrosted
2 cups vodka

Directions
Combine all of the ingredients in a large plastic container. Freeze for several hours. It will not freeze solid, but rather achieve the consistency of a slushy.

Scoop into punch cups or wine glasses and serve.

Recipe: Blueberry Brain-power Smoothie

HEALTHY BLUEBERRY BRAIN BOOST SMOOTHIES

Servings: Serves 2 (makes about 2 1/2 cups)
Ingredients
1 cup fresh-pressed apple juice
1 fresh ripe banana
1 1/2 cups frozen blueberries
1/2 cup frozen raspberries
1/4 cup raw walnuts , preferably soaked and drained

Directions
Combine the apple juice and banana in a blender. Add the blueberries, raspberries, and walnuts. Blend until smooth

Recipe: Easy Creamy Lemon Pie


How easy is this? Cold and creamy and wonderful!

1 (6 ounce) can frozen lemonade 
1 (14 ounce) can sweetened condensed milk 
1 (8 ounce) container Cool Whip or whipped cream
1 graham cracker crust (I buy this all ready made)

Use mixer and mix all ingredients until fluffy. Pour into ready made crust. Refrigerate until firm. I let it set overnight. This can also be made with limeade too.

Top with whipped cream or Cool Whip and garnish with lemons.

How to Keep Strawberries Fresher Longer


It's that time again...want to keep your strawberries fresh longer?

To keep the strawberries fresh longer in the refrigerator, use 1 Part White Vinegar to 10 Parts Water. Soak the strawberries, leaves and all in the vinegar/water mixture for a few minutes. Then drain the strawberries in a colander until they are completely dry.

Then place strawberries in an uncovered bowl in the refrigerator. The vinegar/water mixture kills any mold spores on the strawberries and keeps them fresh longer. The vinegar does not affect the taste. This also works for all kinds of berries: blueberries, raspberries, blackberries, etc. It really works!!

Recipe: No Bake Peanutbutter Bars


"Quicker than rice krispie treats and tastier than Reese's"

3 cups corn flakes, crushed
1 cup crunchy peanut butter
1/2 cup sugar
1/2 cup white corn syrup
6 ounces chocolate chips

Directions:

Heat peanut butter, sugar and corn syrup over low heat to melt. Stir in cereal.

Pat into a 8x8 lightly greased pan. (I line my pan with foil and then lightly spray it. When it is time to cut them, the foil lifts right out.).

Melt chocolate chips over low heat or in the microwave and spread over top. Cool until firm

Recipe: Shrimp with Italian Seasoning


Attention shrimp lovers!!
Try this quick way to make fabulous shrimp.

Melt a stick of butter in the pan. Slice one lemon and layer it on top of the butter. Put down fresh shrimp, then sprinkle one pack of dried Italian seasoning. Put in the oven and bake at 350 for 15 min. Best Shrimp you will EVER taste :)

BROWNIE REFRIGERATOR CAKE

BROWNIE REFRIGERATOR CAKE

Ingredients:
2 brownie mixes
1 extra large egg
1 (8 oz.) package cream cheese, softened
1 cup powdered sugar
2 (8 oz.) containers whipped topping
1 (3 oz.) package instant chocolate pudding
1 (3 oz.) package instant vanilla pudding
3 1/2 cups milk
1 Hershey candy bar or chocolate syrup


Directions: Mix brownie mixes according to directions. Add egg. Bake in 9x13 inch greased and floured cake pan. Mix cream cheese, powdered sugar and 1 container whipped topping. Put this mix on top of the cooled brownies. Blend puddings and milk together and put on top of the cream cheese mixture. Top with another layer of whipped topping. Put chocolate shavings or chocolate syrup on top. Refrigerate until ready to serve.
